Mrs Smiths Jelly Roll

3 eggs
1 cup sugar
1/4 cup cold water
1 cup flour
1 1/2 tsp baking powder
1/3 tsp salt
1 tsp lemon

Beat eggs ; sugar,and water,add rest of ingredients.
Line a cookie sheet with wax paper.Pour mixture on this .Will be thin.Bake at 400 until slightly browned.Dampen a dish towel , add icing sugar to the towel.When done remove wax paper and put jelly roll on the towel.If the sides seem dry cut this part off as it will make it easier to roll.Now you can spread your favorite topping on the jelly roll.Some suggestions are : jam, lemon pie filling,chocolate pudding etc.Roll up starting at the longest side.Delicious and very light.

Black Forest Cake



2 cups flour
1 3/4 cups sugar
1/2 cup cocoa
1/2 tsp salt
1 tbsp baking soda
1 egg
2/3 cup Canola oil
1  cup sour milk (sour sweet milk by putting 1 tbsp vinegar in it.)
1 cup strong hot coffee
1 can of cherry pie filling
Cool Whip
 Add all ingredients except cherry pie filling and cool whip, together in a food processer.Mix well.Mixture will be thin.Bake in 2 layer pans.Bake until
done in a 350 oven.
When cool add 1/2 the cherry filling on bottom layer,then put second layer on this and add the rest of the cherry filling to the top.When ready to serve top with cool whip.

Quick Orange Pudding

2 cups boiling water
pinch salt
2 1/2 tbsp butter
3/4 cup white sugar
grated rind & juice of 1 orange
Combine above ing.in 8 x8 pan or baking dish,and bring to a boil.
Mix
1 cup flour
2 tsp baking powder
3 tbsp butter
1/4 cup sugar
1/4 - 1/2 cup milk
Cut butter into flour,baking powder,and sugar. Add enough milk to make a soft biscuit like batter .Add this to boiling sauce by dropping spoonfuls on top of the sauce.Bake in 350 oven for app.30 mins

Banana Cream Pie

2 cups milk
1 egg
1 cup white sugar
1/3 cup flour
pinch salt
1 tsp vanilla
2 bananas
Scald milk in microwave,app 4 mins.
Beat egg,sugar,salt & flour in another bowl.When milk is hot slowly add to second mixture.Cook in microwave about 3-4 mins or until thickened ,stiring a couple of times when it starts to thicken.Add vanilla.
Cover bottom of baked pie shell with 2 sliced bananas.Then pour banana filling over the bananas.Top with whipped topping.
This is a family favorite.This recipe is one my mother made and has been passed down.
